Like the majority of the sprawling Fontainebleau resort on the north Strip, there’s nothing that feels like Las Vegas within Mother Wolf, LA chef Evan Funke’s homage to the cuisine of Rome.

Fontainebleau Las Vegas, the sister property to the iconic Miami Beach hotel, is almost here. The resort, which was initially announced in May 2005, is finally set to open on Dec. 13.
